Understanding Coconut Milk

Coconut milk is the liquid extracted from the grated flesh of mature, brown coconuts. It should not be confused with coconut water, which is the clear, sweet liquid found inside young green coconuts. Mature coconuts are used because their flesh contains the high fat content necessary to create a rich, creamy emulsion.

A common point of confusion is the difference between coconut milk and coconut cream. In a traditional Thai kitchen, "cream" usually refers to the "head" (hua gati), or the first thick press of the coconut meat. The "tail" (haang gati) is the second, more diluted press made by adding water to the already-pressed meat. Commercial "coconut cream" is often an industrial product with even higher fat content and less water than standard milk. While you can use commercial cream, be aware that it will make your dish significantly heavier and fattier.

How to Choose the Best Product

When shopping for coconut milk, your choice of packaging and the ingredient list are the most important factors.

  • Prioritize UHT Cartons: If available, choose coconut milk sold in paper cartons (UHT). These undergo a shorter heat treatment than canned varieties, which helps preserve the fresh, natural aroma of the coconut. While cans are perfectly fine for spicy curries where many herbs compete for flavor, cartons are superior for delicate desserts.

  • Check the Ingredients: The best brands contain only coconut and water, perhaps with a single preservative. Avoid products with long lists of additives, such as guar gum, xanthan gum, or fillers. These are often used to artificially thicken low-quality milk and can prevent the "breaking" of fat that is essential for traditional Thai curry techniques.

  • Avoid "Light" Versions: "Light" or "lite" coconut milk is essentially regular coconut milk diluted with more water. Since the flavor lives in the fat, these products lack depth. You can save money and achieve a better result by buying full-fat milk and diluting it yourself if you wish to reduce calories.

  • Distinguish Between "Milk" and "Beverages": Do not buy the "coconut milk" found in the refrigerated dairy substitute aisle. These are "coconut beverages" intended for drinking or cereal; they are too thin and lack the fat content required for cooking.

Proper Usage and Substitutions

Coconut milk serves as a dairy-free alternative to provide creaminess in various dishes. Its applications include:

  • Savory Dishes: Bases for curries, stews, and soups like Tom Kha Gai.

  • Sweet Treats: Puddings, porridges, and traditional coconut ice cream.

  • Everyday Uses: A rich addition to smoothies, salad dressings, or coffee.

If you need a substitute due to an allergy or lack of availability, you can use evaporated milk or a mix of heavy cream and dairy milk for texture. For a vegan alternative, oat milk or soy milk with high fat content can work in savory dishes, though they will lack the specific tropical aroma of coconut.

Storage and Troubleshooting

Once a container is opened, coconut milk should be refrigerated. It typically stays fresh for about one to three weeks. To extend the shelf life of milk that has been open for a while, you can bring it to a boil once before cooling and returning it to the fridge.

  • Freezing: You can freeze coconut milk, but it will likely become grainy upon thawing. It is perfectly fine for cooked dishes like curries after freezing, but it is not recommended for smooth desserts.

  • Separation: It is completely normal for a can of coconut milk to separate into a thick, solid white layer (the fat) and a watery liquid. This happens because coconut milk is an unstable emulsion. Simply warm it up and stir or whisk it to bring the layers back together.

Nutritional Profile

Coconut milk is a calorie-dense food primarily composed of fats. A standard 80 ml (1/3 cup) serving contains approximately 150 calories and 15 grams of fat. Most of these fats are medium-chain triglycerides (MCTs). While research is ongoing regarding the specific heart-health benefits of MCTs, coconut milk should be viewed as a healthy, natural fat source to be enjoyed in moderation.
